Origin: Peru- La Cascarilla by Gilmer Galvez Malqui
Gilmer is a farmer in Jaen, in the village of El Lavrel in northern Peru. Jaen is one of the most famous areas and has become the hub for coffee in the north. There are many farmers with great features out there, but most of them need some support in the aftermath harvest processing to produce high quality coffee. Gilmer is part of one program receiving this support. La Cascarilla is located at an altitude of 1850 m. It is a small farm, only 1 hectare plantedwith 85% Typica and 15% Catimor. It’s a family business, but they have up to 7 reapers help them in the season. Yield per tree is generally low. The farm has a small useful place where Gilmer processes coffee, which is fermented dry for about 24 hours in bags before being washed and rinsed and then dried on a tarpaulin. The drying Lasts about 10 days.
