Ecuador CM Washed La Florida – A Unique Blend of Tradition and Innovation

Grown at an elevation of 1800 meters in the rich soils of Hacienda La Florida, this Catucai variety undergoes a meticulous CM-washed process. The beans are pulped, fermented in sealed bins with a specific strain of yeast (Saccharomyces cerevisiae) by Lallemand, and pressurized with CO2 in grain-pro bags for 15 days. This controlled fermentation brings out unique flavors, reminiscent of pineapple, rum, and coconut, offering a clean, crisp alcohol-like note unlike typical washed coffees. The coffee is then carefully washed and dried on raised beds for about 15 days, ensuring a clean finish. With its floral, herbal, and spicy notes, along with vibrant acidity and juicy body, Ecuador CM Washed La Florida is truly a coffee connoisseur’s delight, offering a bright, clean, and intensely flavorful cup.
