Description
La Claudina is located in Antioquia, Colombia, and owned by Juan Saldarriaga, one of the country’s most innovative producers. Sitting between 1,400–1,800 masl, the farm cultivates Castillo and Tabi among other varieties. Since 2012, Juan has transformed the farms with experimental processing and state-of-the-art drying systems.
This coffee is processed as a natural and dried using cold mechanical air systems and parabolic beds, allowing for precise control and slow development. These conditions create a sweet, structured cup with flavors of plum juice, cinnamon, vanilla, and apple pie. Drying can take up to 30 days, contributing to its complexity and balance.
We visited Juan and his farms – La Claudina, El Encanto, and Volcán Claudina – back in 2019. Since then, we’ve been purchasing coffee from him every year. Our relationship is built on trust, consistency, and a shared passion for quality. This lot reflects what Antioquia can become when tradition meets innovation and vision.
