His farm spans 4.25 hectares at an elevation of 1930 meters above sea level, producing heirloom variety coffee known for its bright and clean profile. This coffee, part of a project initiated during the 2023-2024 harvest, supports single-farmer production, showcasing Ayele’s dedication to quality and sustainability.
The coffee undergoes a meticulous natural processing method, where selectively picked, uniformly ripe red cherries are dried to enhance their inherent sweetness and complexity. This method brings out vibrant notes of red fruit, berry candy, orange, and rooibos tea, complemented by blossom floral and herbal undertones. The result is an easy-drinking coffee with a cupping score of 86, embodying the unique terroir of Yirgacheffe.
