In each Reserve coffee, the producer takes advantage of each specific terroir, i.e. the local climate, soil quality and topography. They grow different varieties for their high quality and distinct taste characteristics. After harvesting, through advanced processing methods, they bring out these characteristics within the green coffee beans. So, after roasting them precisely, we can offer you some really great coffees.
Geisha Natural Las Margaritas
Nestled in the picturesque landscape of Las Margaritas farm, this Geisha Natural coffee offers a truly unique experience. Grown at an altitude with an average temperature of 17-22°C and an annual rainfall of 1,340mm, the coffee cherries are carefully cultivated in a small crop area of 4.8 hectares. The farm’s high-altitude environment, combined with its meticulous processing methods, ensures a coffee that is both vibrant and complex.
The process begins with hand-picking the ripest cherries, followed by a special fermentation technique. The cherries are placed in a tank that allows air to flow but is not sealed, allowing for a controlled 48-hour fermentation. This process, combined with the higher concentration of sugars in the cherries, enhances the intensity of the coffee’s flavor profile. The temperature is closely monitored every 6 hours to ensure it doesn’t exceed 30°C, preserving the delicate flavors.
After fermentation, the coffee is initially dried in a silo at around 40°C for 30 hours before being transferred to solar drying beds for about 15 days. This careful drying process locks in the coffee’s exceptional flavors, resulting in a cup that is rich with red fruits, cherries, and jasmine floral notes, balanced by light hints of lemongrass and white chocolate. The taste is further enhanced with lingering notes of vanilla, cherries in syrup, and a subtle finish of caramel and green apple.
