Java Blossom by Elias & Shady Bayter

Java Blossom is a unique offering from the El Vergel estate, located in the Tolima region of Colombia at an altitude of 1,450 meters. This exceptional coffee is grown by Elias and Shady Bayter on their family estate, where they combine traditional farming with modern techniques. The estate, located in the municipality of Fresno, enjoys an ideal climate and altitude for the production of high-quality coffee with distinctive aromatic and fruity characteristics. With notes of jasmine, chamomile, tea rose and watermelon, Java Blossom offers an exceptional coffee experience.

The Java variety undergoes Carbonic Maceration treatment, a first for El Vergel. This complex method involves injecting CO2 into sealed tanks at high pressure (up to 6 bar) for 96 hours, breaking down the skin of the coffee cherry and allowing fermentation in an anaerobic environment. After fermentation, the coffee is sun-dried for 25 days and stabilized in GrainPro bags for 45 days before storage, offering a lively and well-structured cup.
