Each bean undergoes a precise 24-hour fermentation in mucilage, followed by a communal drying on patios, ensuring an extraordinarily consistent profile. Stabilized for 15 to 25 days pre-milling, these beans encapsulate the essence of the village’s spirit. The resulting cup is one of unparalleled quality, marked by meticulous washing and a commitment to exceeding specialty coffee standards. Through the Black Condor Project, Emmanuel and his team not only elevate their coffee but also ensure sustainable practices by rewarding producers with 30% above market value.
