Juicy Berries by Brayan Alvear: A Co-Fermented Fruit Innovation from Huila, Colombia
Juicy Berries is a unique coffee blend grown by Brayan Alvear on his farm, Las Palmas, located in the picturesque region of Huila, Colombia, at an altitude of 1,400 – 1,600 meters. Brayan, a native of Acevedo, Huila, comes from a coffee-farming family deeply rooted in the rich soil of San Adolfo. His lifelong immersion in the world of coffee, combined with the support of 60 other passionate individuals, has helped him craft extraordinary brews that capture the essence of the region.
This coffee showcases an innovative co-fermentation process with fruits, elevating its flavor profile to new heights. The blend of Caturra, Castillo, and Colombia varieties undergoes a 24-hour pre-fermentation in plastic bags, followed by 24 hours of fermentation in cherry. After being depulped, the beans are co-fermented anaerobically for 5 days with dehydrated berries, allowing the beans to absorb rich fruity flavors. The beans are then mechanically dried for 10 days and stabilized for 5 days to ensure a consistent, balanced cup. The result is a coffee bursting with notes of brown spice, berries, caramel, citric acid, lime, and white chocolate.
