This small collective of 15 neighboring producers shares a commitment to excellence, cultivating Red Catuai coffee at an altitude of 1800 masl. The region, famed for its rich biodiversity and the iconic Quetzal bird, provides the ideal environment for coffee production, with its unique climate and fertile soil.
The Red Catuai cherries for this lot were harvested in late January, a time when the cherries reach their peak ripeness, resulting in balanced and mature flavors. Following the natural processing method, the coffee cherries are meticulously dried on African beds for approximately four days, ensuring a refined flavor profile with a fresh and lingering aftertaste.
