Description
Our host for this coffee is Freddy Correa, who decided in 2018 to start growing his own coffee trees on his farm, La Primavera in the Bajo Encanto area. This time they will bring back the Pink bourbon creation coffee, because people were delighted with the result and the demand for it was great. It’s the 4th year in a row that they’ve partnered with Cesar at Pilatoto Huila, with whom they’ve created this profile, who they believe reflects everything people are looking for in coffee! This particular profile was created after two different fermentation processes. The pre-fermentation took place for 24 hours and then followed by 36 hours of aerobic fermentation in bags. The process was completed when the coffee cherries were dried on raised beds for 15 days.
Refreshing and long aftertaste, moderate acidity and bright red fruits!
