Gondo Wet Mill lies in the heart of Murang’a and operates under the New Kiriti Farmers Cooperative Society, established in 1998. The mill works with 727 smallholder farmers cultivating coffee on deep red volcanic soils at elevations up to 1,900 meters. These conditions create density, structure, and aromatic concentration in the cup. The coffee undergoes a classic fully washed Kenyan process. Selectively handpicked cherries are pulped, fermented for 16–18 hours, washed, density-graded, and sun-dried to 10.5–11.5% moisture. This method preserves clarity, sharp acidity, and layered fruit expression. We selected AA Gondo #261 because it embodies what we value most in Kenyan filter coffee: structure, vibrancy, and precision. In the cup, we aimed for tension and clarity—fruit-driven, energetic, and long-lasting. It’s a coffee that rewards careful brewing and offers a deeply expressive filter experience.
This recipe highlights bright acidity, clean fruit expression, and molasses-like sweetness, producing a structured, energetic, and long-lasting filter
