This allows us to remove quakers, over- or underdeveloped beans, and minor visual defects that could compromise flavor. We selected the SOVDA Pearl Mini because it’s designed for the daily needs of a specialty roastery. With dual high-speed 4K cameras and capacity to sort up to 250 kg/hour of roasted coffee, the Pearl Mini gives us precise, fast, and gentle sorting that protects bean structure. Touchscreen control and customizable rejection criteria allow us to define what counts as a defect—minimizing unnecessary waste while maintaining high quality.

The Pearl Mini acts as our final step in quality control. Even with carefully developed roast profiles, there can be individual beans that slip through—scorched, underdeveloped, or outliers invisible to the naked eye. These beans disproportionately affect flavor: introducing bitterness, dryness, or flatness. By sorting after roasting, we focus where it matters most—on cup quality. It’s our way of delivering clarity and reliability in every brew.
