Café Granja La Esperanza is committed to cultivating rare varietals, and Mokka — though tiny in size — is one such treasure. The variety was introduced to their Finca Hawaii farm, where the terroir supports its delicate expression. Their experimentation and persistence have made this lot possible. This lot is processed naturally: whole cherries ferment open-air (anaerobically) over 48 hours, then are dried slowly under controlled conditions. This method emphasizes fruit complexity, preserving brightness while maintaining density in the cup.
