San Gabriel comes from Mercedes Sur, one of Costa Rica’s most expressive highland regions. Although SL28 is famously African in origin, in Costa Rica it reveals a distinct personality. Producers Trejos & Di Tolla grow it at high altitudes with meticulous agricultural care, allowing the variety to shine with elegance and clarity.This washed process is executed with precision: selective picking, controlled fermentation, and slow drying on raised beds ensure outstanding cleanliness, bright acidity, and transparency in flavour. The result is a delicate, floral-fruit cup that highlights the structure and sweetness inherent to SL28. We selected San Gabriel because it represents craftsmanship at its highest form. It is a coffee of purity and finesse—one that inspires us as roasters and baristas.
