Caballero Tanairi is a natural Honduran coffee from Marcala, Chinacla, produced by the Caballero-Herrera family at their Xinacla beneficio. Catuai variety at 1,600 masl, natural processed. Roasted for espresso, it delivers full body, low acidity, and intense fruit sweetness — an espresso with character and a finish that lingers.

The story of Caballero begins with Don Fabio Caballero, Marysabel's father and one of the pioneers of coffee farming in Marcala, southern Honduras. He inherited large areas of land and eventually passed them to Marysabel and her husband Moises Herrera, who brought his own farms into the family business. Together, they manage almost 200 hectares across 17 farms in Chinacla, with their central beneficio Xinacla allowing full processing control. Nordic Approach has been buying their coffee since 2012. Natural processing at Xinacla follows the farm's documented approach. Whole cherries are dried without pulping, allowing fermentation to develop fruit-forward complexity and body density. The Catuai variety responds well to natural processing. The "Caballero" lot is assembled when daily harvest volumes from individual farms are insufficient — a transparent practice that maintains quality without sacrificing traceability. At Handpickers, we selected Caballero Tanairi because it represents what we value most: longevity, land stewardship, and a farming philosophy that goes beyond the cup. The farm's biodiversity — oranges, avocados, bananas — is not certification strategy. It is the practical understanding that a healthy farm produces better coffee.
