Ibisi Mountain Washing Station is located in the rolling hills of Southern Rwanda, near the Nyungwe Forest National Park, an area known for its biodiversity and fertile volcanic soils. The station works with more than 2,000 smallholder farmers, creating a strong community-driven coffee production network. After harvest, cherries are carefully sorted and processed before being dried on raised beds for around 15 days. Throughout the drying process, the coffee is continuously hand sorted to remove defects and preserve clarity and quality in the final cup. We selected Ibisi because it represents the vibrant character of Rwandan coffee. Our goal was to highlight fruit intensity, clarity, and sweetness in the cup, creating an espresso that feels lively, juicy, and beautifully balanced..
