This profile delivers explosive aromatics of lychee, rosé wine, and floral tones wrapped in a sweet, silky structure. A limited reserve coffee, roasted exclusively to order to ensure peak freshness and a cup that reflects both precision and origin brilliance.

Santa Mónica is one of the flagship farms of Jairo Arcila—a producer who has reshaped the Colombian coffee landscape through innovation, precision, and fearless experimentation. With deep agricultural expertise and access to exceptional raw cherries, Jairo develops advanced processing techniques that consistently yield coffees of remarkable clarity and identity. This lot undergoes a Honey process enhanced with wine yeast, a fermentation that intensifies the fruit character of the Castillo varietal. Controlled micro-fermentation cultivates notes of lychee, floral nectars, and rosé wine. The result is a clean, multi-layered cup with effervescent acidity and a velvet-like sweetness, reminiscent of fine sparkling beverages. We chose this coffee because it represents the most artistic side of Jairo’s craft: the ability to transform a cherry into a sensory narrative.
