AA Githiga #096 is a washed Kenyan AA grade from Githiga, Kiambu, processed by the Githiga Cooperative in Githunguri. Varieties SL-28, SL-34, Ruiru 11, and Batian combine into a high-clarity lot with structured acidity and expressive fruit. Roasted for filter, it delivers transparency, vivid acidity, and a dense sweetness that develops further as the cup cools.
Roasting Date: 2026-09-01
AA Githiga #096 originates from the Githiga Farmer Cooperative Society in Githunguri, Kiambu — one of Central Kenya's most established coffee-producing regions. Hundreds of smallholder members deliver cherries to the cooperative's central factory, each registered under a member ID. Kenya's coffee legislation requires cooperatives to return at least 80% of sales revenue to members; in practice, Nordic Approach's partner cooperatives keep operating costs between 9–12%. Processing follows Kenya's characteristically rigorous washed protocol: disc pulping, dry fermentation in concrete tanks, intermediate washing and soaking for consistency, drying on raised beds at 11–12% moisture target. This methodical approach produces the transparency and structural clarity that allows Kenyan AA coffees to consistently express varietal character and terroir. At Handpickers, we selected AA Githiga #096 because it represents Kenya's coffee system at its most functional — a cooperative that pays its members fairly, a processing protocol that prioritises consistency, and a cup that makes the work visible. Kenya's auction system is not bureaucracy; it is a guarantee of traceability from the farm to the buyer.
This recipe highlights bright acidity, clean fruit expression, and molasses-like sweetness, producing a structured, energetic, and long-lasting filter
