La Pastora is grown in southwestern Colombia, in regions such as Huila and Nariño, where altitude and microclimate create coffees with delicate acidity and sweet finishes. Producers work with dedication and preserve traditional harvesting and processing methods that respect the plant and the land.This coffee is washed processed: ripe cherries are pulped and fermented in water for 36–48 hours before being washed and dried on raised beds. Grown at 1,600–1,900 m in Huila and Nariño. Harvested by hand from May to July at peak ripeness.
Washed method with 36–48 h fermentation and clean water washing.
Dried on raised beds for 10–15 days and hand-sorted by density.
Exported under vacuum-sealed bags to preserve freshness and aroma.
Roasted to Lighttell 68 for espresso sweetness and depth. Best after 20 days of rest.
